I want to start off by saying, when I made these, my husband said, “I could eat this everyday!” We all love when our husband enjoys what we make for them. So here you go ladies, how I make my yummy chicken fajitas:
- One package of boneless, skinless chicken tenders
- 3 colorful peppers, washed and sliced
- 1/2 onion, sliced
- Olive oil (enough to cover the bottom of the pan)
- Salt, pepper, garlic powder and any of your favorite seasonings!
- Whole wheat tortillas
Coat your pan with oil. Add the sliced peppers and chicken tenders.
Add your seasonings, put it on a medium setting, and cover it with a lid.
Stir occasionally. About 20 minutes in, I add my onions because I discovered the onions aren’t as “soggy” this way.
Total cooking time: Approx. 35-40 minutes. Serve in a tortilla, with a side of black beans and avocado. This is a healthy, protein-packed meal!
Black beans: Fiber
Avocado: Vitamin E
Peppers and onion: Lots of vitamins and antioxidants!
